Recipe of the month: Avocado toast
Start your day with a simple breakfast that brings together fresh ingredients, comforting flavors, and just the right amount of crunch. This avocado toast is easy to prepare and perfect for a nourishing morning or a light meal any time of day.
Ingredients
2 slices of bread
A small amount of butter
2 tablespoons mayonnaise
1 ripe avocado
2 fried eggs
1/2 tomato
1/4 white onion
2 tablespoons fresh cilantro
Salt and black pepper
Preparation
Lightly spread butter on a hot comal and toast the bread until golden and crisp on both sides.
In a small bowl, prepare the pico de gallo by combining diced tomato, onion, and chopped cilantro. Season lightly with salt and set aside.
Spread a thin layer of mayonnaise over each slice of toasted bread.
Slice the avocado, season it with a pinch of salt and black pepper, then spread it evenly over the mayonnaise.
Top each toast with a freshly fried egg.
Finish with a generous spoonful of the fresh pico de gallo.
