Recipe of the month: Chicken fajitas with poblano pepper strips
This month, we visited one of our host families, and Yazmin, the host mom, taught us how to make this recipe for chicken fajitas served with creamy poblano pepper strips and potatoes, an easy and quick dish to prepare. All the ingredients come together to create an explosion of flavors for your palate, making mealtime the perfect opportunity to share with family!
Ingredients
Ingredients for the poblano strips
3 large poblano peppers.
Salt to taste.
Oil.
Butter.
17 small chambray potatoes (baby potatoes).
Cilantro-marinated chicken.
3 cloves of garlic.
250 ml of cream.
Ingredients for the chicken marinade
Approximately ½ cup of cilantro.
Olive oil.
2 large lemons or 4 small ones.
Salt and pepper to taste.
Preparation Method
Marinating the chicken
Wash the cilantro and finely chop it.
In a bag, add approximately ½ cup of olive oil.
Add the lemon juice and the cilantro.
Mix well and add the chicken.
Let the chicken marinate for at least two hours.
Preparing the poblano strips
Wash the peppers with water, dry them, and apply a thin layer of oil.
Roast the chiles directly on the stovetop burner.
Place the poblano peppers in bags and let them sweat for about 10 minutes so they can cool.
Boil the potatoes for approximately 20 minutes in salted water so they can be easily cut. Cut the potatoes into large pieces and place them in a separate bowl.
Once the poblano peppers can be handled without burning your hands, massage them inside the bag.
Rinse the poblano peppers inside and out with water. After rinsing, slice them into strips. Set aside.
Finely chop the garlic cloves.
In a pan over low heat, add the poblano strips with half a stick of butter, the garlic, and salt to taste. Cook for approximately 10 minutes so the ingredients combine well, stirring occasionally.
Add the cream and continue stirring occasionally. Once it starts to boil, let the mixture simmer for about 2 more minutes. Add the chopped potatoes and mix well.
In another pan, add oil and let it heat up. Cook the chicken fajitas.
And that’s it! You can now serve your chicken fajitas with poblano strips on a plate. If you like, you can also serve this dish with a bit of salad on the side.
