Mexican Gastronomy: Intangible Cultural Heritage of Humanity

One of Mexico’s greatest symbols of identity to the world is its gastronomy, which reflects the cultural richness of the country and the diversity of flavors, ingredients, and traditions it holds. Behind every prepared dish are hands that have cooked it with dedication and love, keeping customs alive from generation to generation.

Today, Mexican gastronomy is not only a reflection of contemporary Mexico, but also tells the story of the changes that have taken place in Mexican society throughout history. It incorporates ingredients widely used in the pre-Hispanic era, such as corn, beans, and chili, while also including ingredients brought from other parts of the world.

Each region of the country contributes its own style to the rich variety of Mexican cuisine. This variety ranges from the moles of the central and southern regions, to the (antojitos) of the north, and the dishes of the southeast with Mayan influence. All these dishes are like a celebration for those sharing the meal, often bringing together memories and laughter, creating an atmosphere of joy and togetherness.

The gastronomy of the Yucatán Peninsula is a blend of Mayan traditions and the influences brought by the Spanish conquest, with dishes such as cochinita pibil, salbutes, panuchos, and papadzules standing out. Each of these dishes combines its ingredients to delight the palate with intense and surprising flavors, while also providing a connection to our roots and culture, allowing us to appreciate the diversity and creativity that characterize Mexico.

On November 16, 2010, the United Nations Educational, Scientific and Cultural Organization (UNESCO) declared Mexican Gastronomy as Intangible Cultural Heritage of Humanity, recognizing both the ancestral knowledge and culinary techniques that have been preserved through successive generations, as well as the important role of gastronomy in cultural identity and in strengthening community bonds.
