Recipe of the Month: Chori Huevo Tacos

Looking for a quick and flavorful afternoon snack? Try Chori Huevo Tacos, a simple yet delicious Mexican dish perfect for brunch, a hearty snack, or a light dinner. With just a handful of ingredients, you’ll have a satisfying meal ready in minutes.

Ingredients:

  • 4 eggs

  • 200 g of Mexican chorizo

  • 1 cup refried beans

  • 1 cup shredded cheese (any melty cheese works)

  • Flour tortillas

Instructions:

  1. Cook the chorizo
    In a large pan over medium heat, cook the chorizo until it begins to sizzle and release its oils.

  2. Add the beans
    Once the chorizo is bubbling, stir in the refried beans. Mix well and reduce the heat to low.

  3. Scramble the eggs
    In a bowl, crack the eggs and whisk them with a pinch of salt and pepper. Pour the eggs into the pan with the chorizo and beans.

  4. Add the cheese
    Once the eggs are just set and the mixture is fluffy, turn off the heat. Add the shredded cheese and stir until melted and well combined.

  5. Warm the tortillas
    While the filling is cooking, heat the tortillas on a separate pan or comal until soft and warm.

  6. Serve and enjoy
    Spoon the chori huevo mixture into warm tortillas and serve hot.

Tip: Add fresh salsa, avocado slices, or pickled onions to elevate the flavor.
