Juan's Huevos Rancheros

This month we asked Juan, one of our favorite restaurant owners who also happens to be the son of our first homestay mom, Doña Guadalupe, for his delicious Huevos Rancheros recipe. Juan’s restaurant is named after his mom: Mamá Lupita’s. Anyone who knows Juan or Doña Guadalupe will know what incredible cooks they are.

Huevos Rancheros are a personal breakfast favorite of many. The mix of eggs, tortillas and salsa is delicious. Juan has his own variety and adds ham into the recipe, but of course they’re still just as tasty without. You can also be flexible with the types of chilies, tortillas, and cheese you use to sprinkle on top. Some people even eat their Huevos Rancheros with tortilla chips! No matter how you whip up this incredible breakfast, we guarantee you’ll love it.

For one person

INGREDIENTS:

  • 2 eggs

  • ½ medium tomato, diced

  • ¼ onion, diced

  • Thumbnail of chile poblano, diced (remove the seeds)

  • Thumbnail of chile ‘xcatik’ (also known as chile ‘guero’), diced (remove the seeds)

  • 2 tortillas

  • 1 piece of ham

  • 2 large pinches of salt (or more for taste)

  • Pepper

  • Oil for frying

  • Sour cream for topping

  • ‘Queso fresco’ or cheese of choice for grating on top

  • Avocado slices for topping

  • Beans and rice to serve on the side

PREPARATION:

  1. Heat oil in a pan and fry the onions and chile until onions are translucent

  2. Add tomato and 2 large pinches of salt, simmer over medium heat until it has cooked down, then set aside

  3. Fry the 2 eggs as you like them (keeping the yokes uncooked is our personal favorite!)

  4. While the eggs are cooking, fry up the tortillas and ham in a bit of oil

  5. Place the 2 tortillas on the plate next to each other with the ham on top

  6. Place one egg on each tortilla

  7. Generously pour the salsa on top of the eggs

  8. Add the sour cream, grated cheese, and avocado on top

  9. Serve with beans and rice, and enjoy!
