Pedro's World Famous Guacamole Recipe
Anyone who's had the pleasure of meeting Pedro for any length of time will have heard tales of his legendary guacamole... some say it's the best guacamole in Felipe Carrillo Puerto, some say it's the best guacamole in Quintana Roo, some even say it's the best guacamole in Mexico. But now you can try it for yourselves and make it at home.
Pedro's World Famous Guacamole Recipe
Number servings: 2-4 (but it really depends on how much you like guacamole). Feel free to scale up your ingredients to make more.
Ingredients:
2 large ripe hass avocados
1 tomato (seeds removed and finely chopped)
1/4 of a ripe onion (chopped finely)
bunch of cilantro around the size of a 5 peso piece (course stalks removed and leaves chopped finely)
1/4 habanero chili (deseeded and chopped very finely) or a pinch chile molido (a ground, dried chili perfected in this area of the Yucatan), more if you like it spicy!
1 1/2 limes (juiced)
ground black pepper to taste
salt to taste
Method:
chop and prepare your tomato, onion and a quarter of your fresh habanero chili (if using) and ensure your seasonings are ready
cut your avocado in half, scoop out the insides into a bowl and mash with a fork
start adding your ingredients gradually, mixing well and tasting as you go - don't forget the lime and salt!
your final guacamole should have all the colors of the Mexican flag - green from the avocado and cilantro, white from the onion and red from the tomatoes, and a kick of heat that only Mexican food can deliver!
locals say that putting the avocado stone in the center of your guacamole will keep it looking green and fresh
serve with toasted tortillas or your favorite tortilla chips and ENJOY!
Pedro says the key to this recipe is adding a little bit of each ingredient at a time, building your guacamole as you go. This way you'll never end up with guacamole that is too salty, or too spicy, and the ratio of avocado to onion and tomato will be just right.
La famosa receta de guacamole de Pedro
Ingredientes:
2 aguacate maduro grande
1 tomate (sin semillas y finamente picados)
1/4 de cebolla madura (picada finamente)
manojo de cilantro (se quita los tallos y las hojas se cortan finamente)
1/4 de chile habanero (sin semillas y picado muy fino) o una pizca de chile molido (chile molido y seco perfeccionado en esta área de Yucatán), ¡más si te gusta picante!
1 1/2 limones (jugo)
pimienta negra molida al gusto
sal al gusto
Método:
pique y prepare sus tomate, cebolla y una cuarta parte de su chile habanero fresco (si lo desea) y asegúrese de que sus condimentos estén listos
corta el aguacate por la mitad, saca el interior en un tazón y aplástalo con un tenedor
comience a agregar sus ingredientes gradualmente, mezcle bien y pruebe a medida que avanza, ¡no olvide la limones y la sal!
Su guacamole final debe tener todos los colores de la bandera mexicana: verde del aguacate y el cilantro, blanco de la cebolla y rojo de los tomates, ¡y un picante sabor que solo la comida mexicana puede entregar!

Pedro dice que la clave de esta receta es agregar un poco de cada ingrediente a la vez, creando su guacamole a medida que avanza. De esta manera, nunca terminará con guacamole que es demasiado salado o demasiado picante, y la proporción de aguacate con cebolla y tomate será la correcta.
